The fruit of the walnut tree is highly nutritious and energy-giving. The nut contains 58 - 77% fat, 12 - 25% proteins, 5 - 25% carbohydrates (saccharides), vitamines, minerals and other substances. Walnuts contain potassium, calcium, magnesium, phosphorus, iron, manganese, copper, zinc and other elements. With their chemical composition and high calorific content, walnuts outperform many other forms of food both vegetable and animal. Walnut oil is recognised for its high content of unsaturated fatty acids, both linoleic and linolenic, which are considered essential to normal growth and development of the body, the elasticity of blood vessels, the metabolism of cholesterol, protection against the development of ateriosclerosis and fatty liver.

are used in patisserie and bakery products, in the preparation of ice-creams and chocolate products.

The hazelnut (fruit of the Pontic and European hazel trees - corylus pontica, corylus avellana) - plays a leading role in various traditions of nut cultivation. Thanks to its nutritional and medicinal qualities the hazel tree is an irreplaceable raw material in the preparation of patisserie. From hazelnuts we get the following ingredients for patisserie: hazelnut paste, ground hazelnuts or hazelnut-flour, sliced hazelnuts, roast hazelnuts, sugared hazelnuts, salted hazelnut, blanched hazelnuts, chopped hazelnuts.
